Them chickens is ash and I'm lotion
Like Gwen Stefani (Hollaback Girl) Mariah appears to be making up her own slang. Chickens is a word normally used to talk about women (like chick). I'm lotion, which she accompanies in the video by running her hands suggestively down her body, means she's smooth and sexy.

As for the rest, she motions at ash as if wiping ash from her hands. Given how "hot tamale" she says she is earlier in the song, she might think she is so hot that other women are burned to ash by being around her. But it is also probable that she is talking on a more literal level about the ashy color that African Americans sometimes get when their skin is dry--since lotion is the cure for that.

Carey's own remarks on the expression are mystifying. When asked about this line in an April 2005 Newsweek interview, her response was, "See, I did it as an empowering thing, so the girls could know they're hot, or pip, or whatever. See, they're not the chickens, they're the lotion. [Laughs] Never mind." The pronouns in the song seem to indicate the opposite, but in any case, it's clear from that statement that she thinks lotion is pretty great and a chicken is not something you want to be.

what This word doesn't really have any meaning here. It's just a sound effect.
